I have a sad confession to make. As of a few weeks ago, I hadn’t eaten ice cream in more than a year. It’s not that I don’t like it. I love it! But after giving up dairy and moving far away from my favorite Whole Foods store, I hadn’t been able to find a delicious option.
When my local grocery store recently had a sale on ice cream makers, I decided it was time to end my no-ice-cream streak. Most ice cream makers end up collecting dust after the thrill of the first batch is gone, but my ice cream maker is already on round three thanks to Cookie + Kate‘s delicious vegan Chai Coconut Ice Cream! This dairy-free, egg-free ice cream made with coconut milk, honey and spices is perfect for scooping into a waffle cone with a few sprinkles on top. With temperatures hitting 85 degrees in Santa Monica this week, I’m gearing up for another batch!
