I baked chocolate chip cookies last night after the kids fell asleep. Chopping dark chocolate while yet another snowstorm raged outside seemed the perfect cure for this California girl’s winter blues. That my 3-year-old woke up right after I had pulled the first batch out of the oven, begging to taste a cookie, made it even sweeter. I went to bed happy, and woke up to the sun shining and a cookie jar filled with delicious treats.
But I haven’t told you the best part yet. These cookies are not only chewy and rich, they’re also vegan, gluten-free and naturally sweetened. Use organic ingredients and they taste even better. I’d been searching online for a “gluten-free, vegan, no-refined-sugars chocolate chip cookie” for months, but I’d never found a recipe that had it all. Then a few weeks ago, a friend posted a link to the beautiful vegetarian food blog Cookie and Kate and my wish came true.
Cookie and Kate is run by cook and photographer Kate Taylor from Kansas City, Missouri (Cookie is her adorable rescue dog). The site, which was a Saveur Best Cooking Blog Finalist in 2012, features yummy vegetarian recipes and is all about celebrating real, sustainable food that “delights the senses and nourishes the body.”
